wanting to replace the HDD on my Late2012 MacMini I would like to know if the
Samsung MZ-75E1T0B/EU EVO 850 interne SSD 1TB (6,4 cm (2,5 Zoll), SATA III) schwarz available on amazon i want install in it is a problem?
Before the drive exchange do i need to reinstall the operating system or can I simply transfer all the data from the HDD to the SSD and the slide it back in ?

Yes the EVO 850 is a good SSD.
I would first install the SSD I an USB enclosure or dock and then clone the internal drive to SSD

then test the clone by booting to the SSD when it is still in the enclosure. it will be a little slow since you are using an USB connection. If it works then exchange disks

Is there a problem with Sata III because I saw Sata M too; where is the difference?

SATA M.2 and mSATA are blade-type storage cards. See:

For you Mac you need the 2 1/2 inch form factor SSD storage device like the EVO 850 you listed

So if I can resume it:
- I do a back up
- take the hard drive from my MacMini
- I copy the hard drive to the SSD a putting it into a USB enclosure I already have
- I put the SSD back in the MacMini
- Boot up normally

First you install the new SDD in an external USB enclosure or dock and then clone the internal disk to the external SSD.
Then you shutdown and boot with the Option key depressed. Select the external SSD for startup and see if OSX on the SSD works.
If it works than take the Mac apart and exchange disks
