I'm using the standard watch face, but a time for Las Vegas keeps appearing at the top of the watch in small print. I can't change this too a city I actually care about. I've made changes in the Word Timer on my watch and on my iPhone, I've even eliminate weather cities, there is no way I can get it to disappear or (what I want) change to another city. I'd like to see a second cities time, but I can't get it to change
Try these steps
1. On the phone
Go to world clock
Put in the cities that you want
2. Force restart the phone and the watch
Restart your Apple Watch - Apple Support
Restart your iPhone, iPad, or iPod touch - Apple Support
3. Try to change the city on the watch face using the customize method as per usual
The city you entered into the phone should now be available to pick

It is neither necessary nor appropriate to force restart your devices.
Except under certain circumstances (this is not among them), as the support articles explain, your devices should only be force restarted if they have become completely unresponsive.
