Apple weather app a day behind

I am having an issue where the stock (comes with phone) Apple Weather app is showing yesterday's date instead of today's date

From what I have read in other threads, this seems to be a common problem with the app, but the answers to those threads are either incorrect or unanswered

The most common answer is to check the date & time settings, problem is the date & time settings are already correct, and is displayed correctly on the lock screen and calendar app, the problem is isolated to the weather app itself

As the screenshot shows, it says that it's Tuesday the 17 at 1:58AM, thing is, it's not, it's actually Wednesday the 18 at 1:58AM, and the lock screen and calendar reflect this correctly
