Why is mail taking up 1GB of space?
So in storage on my iPhone, it's says that mail is taking up 1GB of storage. This can't be true as I have deleted all my emails.

Have you also deleted the deleted mail from the trash. Have you checked at iCloud.com to see how much it reports is in mail there.
