Now TV streaming via iOS devices sound but no picture

No, unfortunately you cannot update the apps on your older ATV.

When you access other programming using the ATV, do you use the built-in apps, or do you AirPlay from the iPad?

When you experience the problem with Now TV, does the video play on the iPad, while the sound is sent to the ATV?

This is a key question: when you open the iPad Control Center, and access the AirPlay popup, what icon appears beside Apple TV? Is it a TV rectangle, or a little speaker with a circle on it? If it's a speaker, ATV is telling you it cannot handle video. In that case, try disconnecting an reconnecting both ends of the HDMI cable from ATV to TV. If it's a TV, then ATV is ready to accept video, but apparently the Now TV app on iPad is not willing to send it.

Are you using mirroring (shows iPad screen on TV) or just normal AirPlay?

The Now TV app may not allow AirPlay. The provider would do this if he offers another service for TV, and doesn't want the mobile service to compete with that.

You have an Apple TV 3 and assuming you are in a location where Now TV is available it should be available on the Apple TV 3. Here's mine...

There might be a couple of reasons why the app doesn't show up for you. You mention you have a lot of US apps, perhaps you have set your location incorrectly (settings > general > region format, settings > iTunes Store > location). Alternatively it may just be hidden (settings > Main menu). It may also be the case that your Apple TV software is corrupt in some way in which case you might need to restore it.

I wouldn't bother messing about with AirPlay if the app is available to you on the Apple TV

whilst audio only is often seen when using AirPlay, you do actually say streaming and since Now TV has an app for the Apple TV, it's not entirely clear what you are doing, can you please confirm.
