Was scanning some documents and they came up blurry on the preview. Any suggestions?

The resolution you are scanning at can have a bearing on the image. If you open Image Capture and select Show Details, you are then presented with menus that let you change the scan settings, such as the resolution as shown in the image below.
what are you using to scan them with? It's more than likely your scanner settings than preview. What image format are you saving in?
a good way to see if it's the image vs. preview would be to right click it and open it with Safari.
Consult your scanner documentation. They usually have a Troubleshooting section.
You can also go to the scanner manufacturer website and check if they have a newer driver that you should download and install.
