How to switch Mail accounts

Hi all. I've been using Macs for years but I just started with El Capitan. On my old MacBook I was unable to set up my Gmail accounts in Mail and had to go through Safari. Now i had no problem setting up my three Gmail accounts. The only problem is that I can't figure out how to switch from one account to another. Can anybody please fill me in on this?
