What information is absent from the system.log ? I've never needed to look in the system.log to setup screen sharing...
It system.log El Capitan:
system.log:Sep 29 10:51:25 adminsmacpro screensharingd[1026]: Authentication: SUCCEEDED :: User Name: deploy :: Viewer Address: 192.168.70.79 :: Type: DH
system.log:Sep 29 11:02:50 adminsmacpro screensharingd[4573]: Authentication: SUCCEEDED :: User Name: deploy :: Viewer Address: 192.168.70.147 :: Type: DH
system.log:Sep 29 11:03:00 adminsmacpro screensharingd[4573]: Authentication: SUCCEEDED :: User Name: deploy :: Viewer Address: 192.168.70.79 :: Type: DH
system.log:Sep 29 12:25:11 adminsmacpro screensharingd[39798]: Authentication: SUCCEEDED :: User Name: deploy :: Viewer Address: 192.168.70.96 :: Type: DH
This logging incantation should pull out what you need from the new, improved unified logging data store (Apple System Logging and ye olde syslog logging have both been deprecated in favour of this new fangled system):
log show --style syslog --predicate 'senderImagePath contains[cd] "ScreenSharing"' --info
Logging Screen Sharing
