I can still access my boot camp partition through Parallels but it is no longer an option to boot to when starting up.

Parallels uses it's own BIOS emulation layer, but accesses the NTFS partition. If Parallels works, but you get a black screen when booting normally, it is usually an issues with the BCD. You can use https://support.microsoft.com/en-us/kb/927392 to /rebuildBCD.
