i'd really really like to know how to stop Messages (as "updated" in iOS10.0.2) from suggesting words in that grey bar below the text line. It used to be possible to hide that bar. it's very distracting and useless.

i'm sad that apple continues driving me ever closer to non-apple products through the accumulation of bad design/user experience choices like that one. maybe their beta testers aren't real people?
Under the previous version of iOS, it was possible to close / compress the predictive text bar from within Messages.
If you would like to suggest that Apple considers restoring that feature - or adding a Settings option to the same effect - you can do so here:

Thanks Jonathan UK, but I don't want to turn off Predictive for the entire device. just want to get rid of the pesky/annoying/useless grey bar in Message.

Or, their beta testers were people like me who were annoyed at accidentally hiding the predictive text bar. I like it much better now. It has noticeably improved my user experience. Yes, you can make the case that Apple should make it user selectable but, in reality, that's never been the way Apple does things.

To turn off predictive suggestions:
Go to: Settings > General > Keyboards - turn off Predictive (at the bottom of the screen).
Not possible.

Thanks Jonathan/Meg. I've submitted feedback, and checked the suggestion from Demo but turning off predictive text within the Message app turns it off for all apps. hmmm
