Beta testing exists for finding bugs, if you don't want to test unfinished software don't apply to.
Confirmed that mokkaxx's solution of updating (not restoring) to 10.0.2 through iTunes with downloaded IPSW file brings back all Activity and Health history on iPhone 7 Plus. Waiting patiently for the bug fix.
I've never subscribed to any form of beta testing . I upgraded to 10.1 because my device told me it was available it is when I checked on my device 14B72 so why have I got this "beta" version ?
Indeed the iOS build is 14B72c on my iPhone 7 ,same as 10.1 beta 5. Any chance we got a beta version by mistake?

Just got off the phone with AppleCare support. I sent them all my diagnostic data, and he said the engineering team was going to look at it and depending on what they find, a software patch may be send out soon. Maybe within the next few weeks? Hard to say. I say for now, just be patient. They seem to respond more to AppleCare cases being set up. So if there are more people reporting this issue directly to Apple, then the faster this issue will get fixed. Actually the rep even said he was noticing this issue on his own phone, so at least he could relate.

Just noticed today that all my activity and health data is gone on my iPhone 7. I noticed when i added my weight and it wouldn't even enter a new entry.. My activity rings from my watch from last April are completely empty. This must be since the update to 10.1 because I saw my data fine before then. Very unnerved and frustrated by this.
iOS 10.1.1 is out now. Everything working again in the Health App.
Confirmed. I had lost all data in Health/Activity apps in 10.1. I "upgraded" back to 10.0.2 using iTunes and a downloaded IPSW file as described in another post to restore data and await bug fix. This morning I upgraded OTA to 10.1.1 and Health/Activity apps are working as expected, with all data in place.
