I have had my new iPhone for 5 days and despite 'adding flights climbed' to favourites in the Health App, it still doesn't show any data. What do I need to do?!

iPhone SE cannot track flights climbed (it does not have a barometer).
(Note that Apple advises that you should not force restart your iPhone unless it is unresponsive and cannot be restarted normally).
Depending on your iPhone model, this feature might not be supported.

Also, some users experienced a delay in the data showing up in the Health app.

Does the Health app count your steps?
Yes - all my steps are counted, as is distance. It also synchs with Strava to log my workouts.
Did you already try to force restart the phone by holding the sleep and home button for about 10sec, until the Appel logo comes back again? You will not lose data, but this can cure some glitches.
Unfortunately I have already done that twice!
Next step after that would be setting it back to factory settings, without using any backup data at first, especially if you updated to 10.1 over the air. Set up your personal details manually and test the step counting feature.
If it works, restore from your latest backup.
