Followed a link on Apple Support that says you can add lyrics by highlighting the song track, selecting get info and then selecting the lyrics tab, but there is none I can see. The Lyrics tab under the menu in the player doesn't offer a way to add lyrics either.

If the song has been ripped from a CD and is stored locally in your iTunes Library the file tab should be showing a file type in the "kind:" field. Are you streaming the song from the cloud?

Oh Man... Thanks. No, I wasn't streaming, I was looking at the import window and the CD. I think iTunes has changed a lot since the last time I tried to add lyrics a few years ago!
Once I selected the imported files, the option was there!

It doesn't actually say in the file tab, but I imported from a CD as Apple Lossless.
What is the file type of the song? Click the "File" tab of the Info panel.
From the iTunes Help: "You can’t add lyrics to some types of files, such as WAV and QuickTime files."
