I think I just found a solution for this just now as I had the same exact problem. My headphones are Samsung with volume controls/remote build in. After reading the above response once I plugged in the headphones with the adapter I started clicking the headphones remote controls up and down several times. And the annoying sound stopped. But you have to do it each time you plug the headphones in. I'm listening on them just now and as annoying as it is this simple step seems to be solving the issue.
Dude! I cannot thank you enough! Thank you! I recently got myself an iPhone 7 Plus, plugged in the headphones and I was hearing that audio on/off clicking sound. You're method works! But after doing several testing, the fastest way is not fiddling with volume control. Just hold any vol control either + or - and the clicking noise should disappear instantly.

Your reply regarding the volume controls on the earbuds was accurate. Thanks for your help, although it is annoying to have to smash the buttons a bunch of times to make them work, it is far less annoying then the clicking sound.
Hope a software update can fix this issue permanently soon.

Your solution is perfectly fixed the problem. I have Bose noise cancellation in-ear phone with volume controls as well and I little adjusted -/+ up and down and noise is totally gone. I hope people having a same issue search your answer first before they move their stepto service center.

I have the same problem with the clicking noise but my earbuds for the iPhone 7 will also skip and pause/play tracks randomly
Ive found that if I wrap the earbud wire along the phone lengthwise, holding the part of the earbuds that connect to the phone still and tight then the noise won’t occur. It’s not a permanent fix but it gets the job done. I hope apple can fix the issue
I have an iPhone 8 Plus with Bose noise cancelling ear buds and have the exact same issue. I was going to return it for a Note 8 until reading this solution. And yes, turns out if I hit the volume up on my controller it gets rid of the click. You do have to do it every time you plug them in but it beats a blank. Thank you.
Remove your adaptor, close all your apps, connect your 3.5mm headphone to the adaptor, then connect it to your phone and in the end ipen your music app. For a few second you may hear a click but it will finish. Trust me

Unfortunately, in this case the solution to this specific problem is not given. I also experience this issue with the adapter and have performed these steps a 100 times. There is just something wrong with this adapter, when you use it with headphones that have a microphone/remote build in the wire. Even Apple's own AirPods with mini jack have this issue.
Please Apple, bring us a software update for this issue, or start a exchange program if the solution is in the hardware.
