If you cannot cancel the subscription yourself Contact Apple Support.
In principle completed sales are final, but you can request a refund for an unwanted and unused subscription renewal.
If the Bloomberg subscription wasn't made via your Apple ID but is with them directly see https://www.bloomberg.com/subscriptions/.
Use Product Feedback - Apple to report your concerns to Apple.

I'm not sending emails, the forum software is because you are following (subscribed to) the thread. Visit and click the Following button near the top right so it reads Follow, or go to your user preferences page and turn off emails for content you are following.

This isn't 'apple support', these are user forums and we are fellow users.
Just deleting an app obviously won't stop a subscription.
Purchases are considered final but you could try the 'report a problem' page to contact iTunes Support and see if they will refund you as a one-off : http://reportaproblem.apple.com

If you don't see any pending subscription renewal to cancel then presumably there is no subscription to cancel, or you set up outside of iTunes, or you've had a phishing message about a subscription that you've never had. Check my post above yours.

When you view your list of subscriptions as shown do you see options to resubscribe to this particular item, a pending renewal date, or nothing? See Avoid phishing emails, fake 'virus' alerts, phony support calls, and other scams - Apple Support in case you're responding to a scam.

For the gift cards no, iTunes Support would only potentially be able to tell you if you had redeemed them onto your own account, they cannot give you any information about other people

Typically free trials set up an auto-renewing subscription which you need to manually revoke at least 24 hours before it is first called on if you don't want to continue with the subscription at the end of the trial. See View, change, or cancel your subscriptions - Apple Support for details. You can cancel the subscription and potentially request a refund via https://reportaproblem.apple.com/ for the most recent payment that was taken, particularly if you can argue that you haven't made any use of the service. Removing an app, or just not using it, won't cancel the subscription associated with it.
