Photos 2.0 continuosly crashes while I buy a photobook. Creating the photobook worked fine but I cannot buy it, it will crash at approximately 40-60%.
I already tried to repair the Photolibrary, used Preview and did all the same also in secure mode.

Exact same problem here.
I had already posted in a thread on this same issue a few weeks back.
I do not believe this issue is anything caused by the user. There are far too many people that suddenly all have the exact same issue, when uploading a reasonably big photo book in Photos 2 on Sierra. Smaller books seem to still work OK.
I've spent hours on the phone with Apple, which was pretty much a waste of time. I've repaired photos library, even copied the photos library to another mac. It simply does not work at the moment, and it is because of a bug in the current version of the software.
Until Apple realise this and make it a priority, I think we are stuck, which is a major pain as I spent 2 months creating the book and cant buy it.
Maps have got nothing to do with this issue.
In another topic it was noted that many of the users who were having this problem were trying to order the 13" x 10" books. Some changed to the 11" x 8.5" book and it went thru without a problem.
Also, PrestoPhotos can print and bind books from the PDF file created by Photos and iPhoto. Don't know about sizes other than the 11" x 8.5" but you can check with them.

It looks like a crash because of a serious bug and program error: Photos is executing a routine with the handler "format error".
All crashes reported so far are crashing in the com.apple.PhotoPrintProductStore framework. If it were a memory leak, you'd be seeing more random crashes .

If all crash logs are showing an error in the same framework, Apple has to fix the problem.
I reformated both books using default font Helvetica new 14 pt, but still the same problem: Crash.
Have you already sent a bug report to Apple? Or directly contacted the Print Product store?
It would be good to have a confirmation that Apple is working on a bug fix. After all, it is the Christmas season and people want to create their calendars and books as gifts.
