Hi - It disappeared a couple of days ago. That happens occasionally, and all I had to do was go to settings, keyboard, and turn it back on. I just went to do that, and the option isn't listed there.
I haven't had to reset it since updating to 10.1.1. - is the option located somewhere else now? (my phone is a 5s)

I can still see this feature in Settings/General/Keyboard/ on my 5s.
Can you see the shortcut if you bring up your keyboard and tap on the key between the "numbers" and "Space", where you also can choose the emoji ? on top of that key you should see the switch to turn on the predictive text feature.
No, but you did solve the problem - to the left of "space" I've got the mic, emoji, and numbers. I can't tap between any of them, but tapping and HOLDING the emoji key brings up the option to toggle it on. Thank you!! I find that feature so handy and I was afraid they'd dropped it. Guess it changed with 10.1.1 - sure wish they'd send us a friendly note when they do things like that - I would NEVER have stumbled on it. Thanks again!

I stumbled, when I thought about the possibility, that there is no emoji key installed on your keyboard and what it's processor (talking about predictive spelling 👿)predecessor had been in the time before the emoji's got invented 😉
No, I got emojis long ago - I don't use them so often any more though, since they added so many new ones, with the smaller screen on the 5s it's really clumsy to use them and hard to find the ones you want. For me it is, anyway - maybe not for the kids...of course the kids all have newer phones 😁
If you press and hold on either the emoji button (the smiley face) in the bottom left corner of your keyboard and then slide up to predictive there should be an on/off switch make sure that is green then your predictive should be back on
