I understand you're curious why the Location Services symbol isn't appearing on your screen. It'd be my pleasure to look into that with you.
The Location Services symbol is designed to appear at the top of your screen when it's currently in use; meaning you might not see that symbol at the top of your screen all the time, even if every app is set to track Location Services while in use. Let's navigate to Settings > Privacy > Location Services and make sure it's enabled. Below that should be a list of each app you've installed that can access Location Services - let's just scroll through that list and make sure you have each desired app set to 'While Using' or 'Always'. 'While Using' is encouraged, simply to preserve battery life and cellular data on a long-term scale.
Using Maps as an example; if you set it to 'While Using', next time you boot up Maps and try to use it's GPS service, it'll automatically recognize that Location Services were active in a passive capacity and the arrow should appear at the top of your screen as soon as you start tracking a location.
