I need to log out of iMessage with my Apple ID on the phones I bought family members. I have logged out of iCloud, iTunes, and Game Center on those phones, but cannot find a way to do the same with iMessage.
The problem with not being able to log out of their phones with my Apple ID (and re-accessing their iMessage via their own Apple ID) is that we each receive one another's text messages
Please advise.

Add or remove your phone number in Messages or FaceTime - Apple Support
remove your apple id in the message setting for send and receive at.
