Whilst Other would be the most appropriate activity type for recording regular yoga using the Workout app, wearing your watch during hot yoga (which is performed in hot and humid conditions) would fall outside of Apple's handling guidelines for your Apple Watch.
Apple's advises that:
Your watch can be damaged and battery life shortened if used outside of this range.
Note that using your watch outside of Apple's handling guidelines may render your watch ineligible for service under warranty, AppleCare+ and/or chargeable repair service.

To access your fitness data, look in the Health App and Activity Apps on your phone. You can see things like your heart rate, active calories etc. and your Activity Rings.
When you start a workout in the Workout App on your Watch, choose "Other". Once completed swipe right to stop your workout. It will show your summary and if you scroll to the bottom you will see an option to rename. "Yoga" is one of the selections to rename your workouts. Hit save and your workout summary will be saved in the Health and Activity Apps on your phone.
Most of the activity tracking is based on your heart rate, so it will still track your fitness during yoga.
