Wishful thinking, I suppose. I prefer the smaller emoji and don't see why it wouldn't be an option rather than a "feature." I must not have sent a solo emoji since I last updated.

I have no idea where you are using these emoji but I assume that you are talking about texting using iMessages. The emoji are enlarged automatically if you do not add any text at all to the message. After you enter more than three emoji, they return to normal size. They also turn to normal size when you add text.
Why don't you explain in a little more detail how you enlarged the emoji and where you are doing this?
Sorry. Yes, I am using emoji in iMessage on an iPhone 7, running iOS 10.2. I made the emoji bigger by holding one down to use it rather than simply clicking it. Now all my emoji in iMessage are bigger and I can't get them to go back to their original size, though they are still small if I use more than 3 or include text. Is there a way to have single emoji be small again? I've tried shutting down iMessage and restarting my phone, but don't know what else to try.
This is actually a feature, and you can't turn it off. As Demo stated, if you send or receive a message containing only 1 to 3 emoji, they will be enlarged.
No - that is how it works. Why do you think it works differently than Demo has already explained?
