How can I change the photo on my Apple Watch face?

To change the photo on your Photo watch face:
When viewing the time on your current Photo watch face, press firmly on the display > tap on the Customise button > turn the Digital Crown to zoom out and then tap on a different photo to select it.
Options include all photos in the synced photo album. To choose a different album for syncing to your watch:
On your iPhone, in the Watch app, go to: My Watch (tab) > Photos > Synced Album - select an album from your iPhone.
You may instead wish to select the Photo Album watch face, which automatically uses a different photo from the synced album for the watch face each time you raise your wrist:
