Change Numbers default file save location?
I am a brand new Numbers user, and so am unlearning Excel. Has Apple updated Numbers to allow setting a default file save location, rather than the last folder?

That is unfortunate. Just adds 3 more steps in any work flow process with Numbers (or Pages). Why would any SW peddler think a user wants to save to the last spot? How hard can this be add this feature? MS Office has had it for, maybe 30 years?
You can post feedback to Apple using the menu item "Numbers > Provide Numbers Feedback"
In addition. if Numbers does not do the job you need you should use the tool that best does. There is not need to use force something to do the job something else can.
You can always add a shortcut in the side bar so the "default" location is always available when saving:

Well that was the last place you saved. The converse of that question is if you didn't save in the default location this time, why might you save in the default next time?
There is probably a way to help you reduce your work flow if you can share a little more details about it. My guess, is that it's possible to create an Automator workflow or AppleScript or something to help.

The open/save dialog has another shortcut for frequently used folders.
Click the folder name. The list of folders (locations) will show up as popup menu.

In my opinion, Numbers is alternative to Excel, not replacement of. They are in the same spreadsheet category, but concepts are seemingly different. Excel has mighty power to cover all kind of job, but Numbers gives handy and quick way to create good-looking tables and graphs. [repeat. this is just my opinion]
Like Wayne, I'm also user of LibreOffice, I use it to do the complex jobs those don't fit for Numbers.

I have no problem with stability of LibreOffice.
Maybe because I'm not heavy user. I use it only occasionally, when I need more compatibility with Excel or to use complex formula.
The reason I don't use it for main is the performance. It's not fast as Numbers or Excel.
Anyway, you can try it by yourself and check whether it matches your needs or not.
There are two versions of LibreOffice. ( excluding derivatives )
One is at their official web site where you can get the latest release. (language pack requires separate downloads)

Another, called LibreOffice Vanilla, is at Mac App Store. It's not the latest but (seemingly) a bit tuned for OS X.

As for the best tool for the job, I normally use Excel, have been for decades, like a lot of folks who use spreadsheets. Office was just on whatever computer I was assigned at work. But my personal Office 2008 is getting clunky and doesn't work well under Sierra. Rather than invest in the pricier latest Excel I figured I'd blow $20 and see how Numbers stacks up. I am just learning the features. Since I think in terms of Office features and options (See how they brainwash us? ... I know two technical SW company owners who had to rewrite their GUIs to look like Office ... folks are so used to seeing things done that way. It didn't improve the functionality that I could see, but they had happier customers.), I am looking for the same features and functions that Excel had. I'll eventually get used to Numbers (or not).
As for your last comment, the way I work in Excel is to change the default location frequently, depending upon the project. It is very easy. Imperfect, but it works for me and I am used to it.
BTW, I am not a spreadsheet power user by any stretch. For more complex analysis and number crunching I run Windows inside WMWare Fusion where I run Mathcad and Matlab. Reminds me ... need to check for updates there.
Numbers isn't the only "game" in town. There is also OpenOffice, NeoOffice and LibreOffice(my preferred suite).
These are free and I encourage you to try them out since they try to be a little more like MS Office.

I was reading a recent review of LibreOffice by PCMag. Stability seems to be somewhat of an issue with the Mac variant. Any experience there?
