Retrieve deleted call history

You don't. There is no trash bin, or recycle bin this information goes into. It is deleted. You can restore the entire phone to a backup of the device when the calls were there, but understand that will take the device back to the date/time of the backup. Anything done since that time will be lost.

If you are looking for a particular phone number, most of the cellular carriers provide you with detailed call data on your bill, and most can be accessed via the internet and the carrier's website once you login.
