I have an old Apple Color display, from 1993, still working, and at the moment no computer to plug it into, I was wondering what kind of adapters are there that I can use to run video on it other than a Macintosh?

This monitor has only one resolution, and would probably be of relatively limited interest even if it could be connected to a non-Macintosh computer. I do not know whether the specifications would allow that or not in this case. To begin with, you would have to adapt the two-row 15-pin male Mac monitor plug to (for example) a three-row 15-pin female VGA PC port. A web search would let one compare Mac and PC(VGA) pinouts. You may possibly want to experiment with designing/building your own adapter (cable) if a ready-made adapter with the appropriate internal connections cannot be found (most adapters were intended for use the other way, that is, between a Mac and a VGA monitor). However, I recommend that you look for an old Mac instead, and use the monitor directly with that computer.
Addendum
For your information, a '15-pin two-row (F) Mac monitor to 15-pin three-row (M) VGA adapter' could look approximately like the one shown on page 22 in the manual at https://manuals.info.apple.com/MANUALS/0/MA705/en_US/0340687APWRMACG3SU.pdf (the blue/white Power Macintosh G3 computer has a 15-pin three-row VGA port, contrary to the earlier 15-pin two-row video port). Not to be confused with a '15-pin three-row (F) VGA monitor to 15-pin two-row (M) Mac adapter'. Computer type/platform and monitor specifications as well as the internal adapter configuration may or may not limit or prevent a successful connection.
