I have all the steps down to erase my iPad, and it shows as online. However, as soon as I complete the "Erase iPad" steps, it turns the iPad into offline mode even though it is connected to Wi-Fi and turned on. This results in the erase pending" until it goes back online.
How do I erase the iPad if it can't remain online?

Yes, as soon as you actually execute a remote erase and the device successfully receives that command, it will go offline. When you remote erase the device, you lose all ability to track or detect it remotely anymore.
Activation lock remains in effect though as long as that device is still listed under your devices at www.icloud.com.
Do you still have the iPad? Otherwise, I don’t understand. If it was showing as online in find my iPhone at www.icloud.com and you executed a remote erase, then the instant that erasure actually took affect on the iPad, your ability to see it with find my iPhone also disappears and it will forever only show up as offline. A remote erase erases all, including your iCloud account and find my iphone settings.
If you still have the iPad, just go to settings and erase and reset all settings. Or use iTunes and resotre it as new.
Okay, do you have access to a computer with iTunes? If so, power it off and start iTunes on the computer. Then plug in the iPad and let it start up. It should start up in recovery mode, and then just chose to restore as new.
So how do I completely get rid of data? Remote erase doesn't seem to be doing anything.
I do still have the iPad and the goal is to reset all settings, but I no longer remember the passcode required to reset. This seemed like a second option that wouldn't require the passcode
