Airplane mode on an iPhone, and some iPads, turns off the radios used for cellular communications. There are no Macs with built in cellular connectivity, so, no Airplane mode.
Your Macs are required to be stowed during take-offs and landings, not in the seat back pockets, mainly to prevent them from becoming 2 pound metal missiles flying around the cabin if things get rough.
And those are both turned off when the lid is closed and in Sleep mode.
There isn’t a corresponding option on a Mac; if desired, turn off Wi-Fi and Bluetooth.
