Some of my iOS apps store critical files in the cache which I used to access with iTunes under the 'apps' section.
However, since this tab is no longer available, with iTunes 12.7, I'm unable to access cached files on iPhone or iPad with iTunes. Can you advise how to access these files now?

Not sure what you mean by “cached” files, but saved app data and files are still accessible in iTunes 12.7.
Select your device, then select File Sharing in the sidebar. The main window will display a list of apps and their docs.
