If you're tapping the buttons in control center, it's a change whereby tapping the icons drops the current connection but does not shut WiFi (or Bluetooth) off; to do that you have to use the slide toggles in Settings.
This is quite handy as you can disconnect from a current troublesome WiFi network without having to remember to reenable it later.
From the iOS 11 manual for iPhone:
This behavior is also covered in more detail here:
Use Bluetooth and Wi-Fi in Control Center with iOS 11 - Apple Support
That's your opinion. It's certainly not mine. I've even written Apple thanking them for this stroke of genius! Oh and since we're all users here and Apple isn't here, threatening to go to Pixel really doesn't mean anything to any of us. Go to whatever platform you think best suits your needs.

And I asked for a change like this long ago, a means to just disconnect with a WiFi hotspot or Bluetooth device without turning either functions completely off.
Thank you, deggie!
Not only is this annoying but I have found my phone connected to unsecured WiFi locations. I take public transportation in downtown Los Angeles, the busses there have free WiFi and as anyone knows being connected to an unsecured connection leaves your devises open to hackers. This was not a smart move.
I never connect to unsecured networks. That is just stupid to connect to any unsecured network. Since this last update. My phone automatically connects to unsecured network.
Now for your problem solved comment. I have gone into my setting several times to tell the phone to forget these networks. Yet it still connect. The only approved networks are my job location and home. Yes. I also know that I can go into setting and shut down WiFi all together.
The issue is, this is still a flaw in the update. If you are unaware that the phone is being connnected to an unsecured network then that leave you vulnerable.
I went ahead and asked my co workers too. None seem to have the same issues as we do. Some thought they did but it was the simple solution of going into setting to manually turn it off. Thanks again for all the help. It really did help I trying to find a better solution to my particular situation.
Yes, this is VERY annoying. It's zapping my battery like crazy because it keeps seeking for Wifi when I'm not around Wifi. I'm smart enough to know when I need to turn on my Wifi. I also know how to manage my battery life. This is not a feature... it's a hinderance.
It is very annoying. It was helpful to be able to turn WiFi and Bluetooth on and off before in iOS 10 to save battery when not using either from the shortcut screen. Having to go into the settings to do it now is very inconvenient. Change that back and give users more control over their phones. Thank you.
Then maybe it’s the Bluetooth sucking battery. I’ve tested it during the workday (leaving them on vs turning them off and using only cellular). The battery drains almost twice as fast when they are on and searching for a network or device. There’s also the security issue. I live in an urban area well known for electronic snooping and hacking (DC). I don’t want to make it any easier for people to hack my device than it already is.
Concur. One user on this forum advised me to toggle the setting to require my phone to “ask to join networks” as a way of preventing automatic connections. That seemed great except my phone automatically turned that setting off the following day! Even changing things in settings appears to not permanently change the setting. So what good is it? I don’t like Apple presuming they know what’s best for me or my phone and imposing settings on me. Some here would argue Apple is just doing what’s technically optimal. That may be true, but it’s not how I want it configured. Since I own it, not Apple, that’s what matters.

This is yet another example of Apple losing touch with their customers and putting their own business interests first.
I'm a customer. This meets my needs perfectly. I think it's one of the most brilliant changes Apple has made in ages. Apple is never going to please everyone.
Turning WiFi or BT off with Siri requires one button press.
If your wi-fi is turned off then companies like Apple cannot track where you are, your habbits, where you had lunch, where you shop, where you sleep etc. When your phone's wi-fi is on, your phone is constantly looking for wi-fi access points and can report these access points up to the carrier or Apple - for example, if you are in Macey's, then your phone will can see the Macy's wi-fi access point and report that your are a Macy's shopper - a valuable piece of information.
Lawrence can correct me but I'm pretty sure WiFi doesn't work that way.
This is terrible--meddlesome, cumbersome, and incredibly annoying. After 10 years and 6 successive iPhones, this is one of several recent black marks (face recognition, and its obnoxious ad-campaign chief among them) that has me seriously doubting if I will ever buy another. Apple has really lost its mojo and started doing dumb, clumsy stuff.
I’m a customer and I value having control over my product. Even when I try to take a measure to make my phone less autonomous and more secure, the phone automatically disabled it. Apple might think they know what’s best for me and thus remove that autonomy from me. I find that insulting and annoying. They should just offer tips on how to optimize phone use and explain why that’s best and then let the customer decide.
Apple does not report that information to anyone, not even when you use Apple Pay. Security and privacy are one of the major reasons I use Apple products. But seeing WiFi sites would not transfer that information unless you connected and that would be a vast amount of data. But they wouldn't need to use WiFi to capture it anyway. A far better means would to use GPS and cellular data. So you need to also turn off location services and cellular data and voice.
All these people moaning and whaling over the wrongly perceived security threat by the Wifi or Bluetooth radios being on don't seem to have a clue how vulnerable they are to being tracked by their cellular radios, which they would never turn off.

Yes, this is absolutely crazy. I went to Settings / WiFi and urned of OFF. Danged if it if didn't turn WiFi OFF instead of simply disconnecting from the existing connection. Worse yet, it did NOT turn back on at 5:00 a.m.! This is horrid and must be changed!
Apple has got to make things right or I'll go right to Android!
