If you're tapping the buttons in control center, it's a change whereby tapping the icons drops the current connection but does not shut WiFi (or Bluetooth) off; to do that you have to use the slide toggles in Settings.
This is quite handy as you can disconnect from a current troublesome WiFi network without having to remember to reenable it later.
From the iOS 11 manual for iPhone:
This behavior is also covered in more detail here:
Use Bluetooth and Wi-Fi in Control Center with iOS 11 - Apple Support
And yet you chose to come to a thread to suggest things that you think are wrong with a phone you admit to knowing little about. And you chose analogies describing scenarios in which you made claims about deficiencies for things that are clearly available. If I don't know about something, I don't jump in a discussion about things I know little about. You did, thus it was pointed out that in both of your analogies, you were uninformed.
The control center should allow me to control my phone. If I command it off, it should stay off. What is next. The light going on after 30 minutes? Regardless of how easy it is to go into settings, it defeats the purpose of a control center.
Because for MANY of us, this new improved and oh so logical change is actually a good thing. You've just not realized the significance of this, but to say it's bad is your opinion, but certainly not mine, nor many others.

EDIT : I'm quoting Apple on this link Batteries - Maximising Performance - Apple (AU) . To the ones telling me that it's for Macbooks only and not iPhones, please know that I will consider you as stubborn idiots.
"Wi-Fi. Wi-Fi consumes power, even if you are not using it to connect to a network. You can turn it off in the Wi-Fi status menu in the menu bar or in Network preferences."
Why didn't you quote the advice about iPhones?
When you use your device to access data, a Wi-Fi connection uses less power than a mobile data network — so keep Wi-Fi on at all times.
This so annoying and completely disrupts use. I remember when Apple cared about UX. Not anymore. I think the new strategy is to push the patience of its users to see how much they can get away with or to see how little they need to do to provide a complete product. Things are quickly turning to early 2000s Microsoft.
Same issue & it’s REALLY annoying.
I’ve had ALOT of discussions with other users who share their frustration with this. Apple don’t let the force grow against you by trying to force/dictate choices for end users. Leave this control with the end user or people will loose faith in the brand! Please rectify ASAP
This is not helpful in the least. I am constantly having to go into my settings to turn the Wi-Fi off because it will turn itself back on. When I turn something off on my phone I expect it to STAY off until I turn it back on MYSELF. I will go to bed with Wi-Fi switched completely off, and wake up with it back on! This is ridiculous! Its gotten to the point where I'm ready to delete every known Wi-Fi connection in my phone, including the one for my own house. This needs to stop.
With Android, I use to be able to go deeper into my settings (other than just clicking the Wi-Fi on/off switch) and actually disable my phone from automatically turning on Wi-Fi when it detected a know Wi-Fi source. Can I do that with the iPhone? THAT would be helpful.

With iOS you do exactly the same thing:
It will stay off forever.

Yeah, it’s awful. It’s a waste of time NOT, a waste of battery life NOT, and a high security risk NOT.
Nothing you have said is true. Try reading a few posts in this thread.
If you think your statements are true, please justify them.
Did you (of course you didn't) take even a few minutes to read why you're wrong. it's not a battery drain. It's not even a minimal security risk. I don't doubt you hate it, so that may be the only factual statement you wrote, but you are so wrong, it's laughable.
From my side, it may not be a security issue or even not causes any battery drain, but it is just a quick access problem. Before, we only need to turn the cellular network on and off over the settings menu, but now, we have two and actually more things to do (when you open air drop you need to turn off both wifi and bluetooth again over the long way)... This is not quick access anymore and completely contradicting with the logic of real control center which people are used to with it in the past years. People are mainly complaining about this... I want my old and really quick configurations back, immediately!

As defined by...?
which people are used to with it in the past years
Sorry. This is not logic, but habit and entitlement. If you don't like change, I suggest you stay far away from
technology.
the logic of real control center
You now want to introduce logic to this discussion? Oh the irony.
This is not quick access anymore
Then TELL APPLE. Read the dozens of suggestions the community has made for doing so.
You, and anyone else making demands, are not speaking to Apple here. They host this site but do not use it to communicate with users.

We can't change anything. Nothing. Please stop "asking".
I want my old and really quick configurations back, immediately!
Seriously? Do you not read?
We get you're upset. How does adding irrational and hysterical help you?
You may be right. Indeed, I already started to use "hey siri" command for this purpose.
Besides, there are some times that you need to focus on something else while you need to turn it/them off. Therefore, one may not follow the steps you suggested above...
I don't see this as me finding your mistake. I was refuting your claim that you're not doing what you clearly were. A challenge you created.
Feel free to ignore me. Many do. Many don't. It's your choice.
This is the worst "feature" Apple has released since putting terrible music on my phone without my explicit permission. It really makes the phone almost unusable for people who like to manage battery efficiently. The user experience is maddening! Between the auto-enabled antennas and the buggy updates, Apple is developing a much more indefensible reputation as a shipper of terrible software. The Google Pixel 2 is looking very nice right about now...
