Ask your daughter to unpair her Apple Watch via the Watch app whilst her iPhone is connected to it via Bluetooth and has access to the Internet via cellular data or Wi-Fi:

This will erase all content and settings from the Apple Watch and also remove Activation Lock, leaving it ready for you to use as your own by following the instructions here:

Follow these steps to erase the locked Apple Watch and then pair it with your iPhone:

• Connect your watch to its charging cable, connected to power.
• Whilst keeping your Apple Watch on the charger:
  • Press and hold the side button until you see the Power Off slider.
  • Press firmly on Power Off (do not try to slide it - just press down more firmly than a normal tap), release your finger and then tap on Erase all content and settings.
• Pair your watch using the Watch app on your iPhone.
• If Activation Lock is enabled, ask your daughter to enter her Apple ID and password on your iPhone when prompted.

  This will remove Activation Lock and enable you to set up the watch as your own.
