For some bizarre reason, my iTunes is only showing 11 tracks on albums that have more than 11 songs. I have included a screenshot which shows the problem. I am on Windows 10 with the latest version of iTunes (12.7).
Any help would be much appreciated.

Weird. As Diabla said, changing the width of the iTunes window "fixed" the issue.
Here's an example of an album not showing all the songs :
In order to view all the songs, you can either make the iTunes window a little less wide, then you'll have all the songs in one column :
or you can make the iTunes window a bit wider, then you'll have all the songs in two columns :
So the problem only seems to happen when your iTunes window size is on the limite between one and two columns view. Which is weird.
Still, glad there is a "solution"! Hope this helps.

I was just trying to fix this problem with iTunes 12.7.1 on windows.
What ended up working for me was shortening the width of the artist name sections, so that the albums can have two columns of song names. It's not a true fix, but hopefully apple will fix the real problem in coming updates.
I also just tried moving the artist name width in the other direction and it also fixed it. Weird bug.
Was having this issue as well then by accident I moved the artists window and noticed the songs went back to 2 columns instead of 1.
You are right, you can go either way with the artists window to correct the issue. Just that one tiny area that seems to be the default is the bugged spot.

Same problem here, but on OS X 10.12.6. So it's not OS related...
The problem seems to be only in Artist view :
If I go in Album view, all the tracks are there :
