Why have the keys combination for soft return changed?

I just discovered the keys combination to type a soft return (or soft break, to wrap a line or a word) changed on my Mac in Apple applications (Mail, TextEdit, Notes…).

I checked the online help and it confirmed this change.

It was shift-enter (since a very long time):

It's now control-enter:

Keyboard shortcuts in Notes - Apple Support

In a lot of softwares, control-enter have been assigned to do a different action so it creates conflicts.

How can I restore the original shortcut (I used since my Mac SE/30) ?
