You appear to be an outlier. There have not been reports of "so many issues" from very many other users. In fact, this upgrade seems fairly benign.
To remove High Sierra in general, erase your disk and restore your Mac from the most recent Time Machine Backup from before High Sierra was installed. DO NOT Erase your disk if you do not have such a Backup, or all your files will be lost!
If you could post the exact model of computer you are using (for example, there are more than 50 computers called MacBook Pro) the year, the screen size, the disk type (SSD or Rotating Magnetic drive) Readers could provide more specific advice.
In general, debugging your current situation will be far easier than rolling off your files to make a partial backup, which then must be collated with your backup from May.
Humor me for a little while and download and run this non-invasive "discovery" utility. "Share" and post its report (already pre-laundered of any personally identifiable information) and let Readers have a look at why you seem to be having so much trouble with this upgrade.

I've been reading the MacPro (desktop systems) and the MacBook Pro (notebook systems) forums. I have been answering user's queries there, some of which contain frustration at High Sierra problems.
I do not recall disputing that any particular user was having an issue with High Sierra. I have responded to several users that their High Sierra issues may be easier to solve than the very complicated process of reverting to a previous version of MacOS.
MacOS has never allowed you to re-install an older version on top of a newer version. So you must install the older version onto a Blank disk. Exactly how you get a blank disc without destroying all your files in the process can be complicated. There is no single "best answer" that applies to everyone.
Each case should be looked at individually. Here on the Apple Support Communities, the best way to get that individual support is to start a new discussion.
this forum page (one up from here this post is located) has a big blue, "start a discussion" button on it.
Please start your new discussion, using a title that will attract users you want to help you.
It would be good if you could also include an etrecheck report, so that no one has the play "20 questions" to get the information needed.

The [failed] adobe item is vestigial, and adobe does not use it any more, but they have not had the decency to remove it after that added it to everybody's system.
Google keystone agent help google collect information about you across all areas. if you resent having your information sold by google, remove this item as well. Located in:

You appear to be running Sophos AntiVirus. The Mac contains a very good built-in antiVirus, called XProtect, which is updated frequently. Any third-party anti-Virus you add can make your Mac slower, unstable, and crash. I suggest you remove Sophos. it is in this directory:

You have a damaged version of uTorrent, a bit Torrent adware that uses your Mac to service requests from others across the internet. It is unclear whether what you have is working, but it should be removed anyway.
also, your accounting software is ALWAYS running, rather than starting up when you ask for it. These items are in:

where tilde [~] is an active abbreviation for "current user" that is honored by the files system.

Grant, I to am having problems since installing macOS High Sierrra. Unfortunately apple support will no let me post a new discussion, so I hope you don't mind me asking here. What is happening;
"Having trouble with my Mac (21.5-inch, Late 2012), since installing macOS High Sierra. My computer just closes down/reboots randomly; a black screen appears sometimes when changing software or screens; some Apps are not working properly and crashing; having 'sleep wake failure'..."
Software that is crashing is Layout 2018.

Hi, I have a problem with the High Sierra too. It can't open a simple software called Family Tree Builder, that was ok with the last Sierra version. Now have this problem: "Failed to import cxutils module into Python. See console for errors."
I'm not an expert, don't know how to solve this problem and I really need to use this software to work! I couldn't imagine that High Sierra would give me this problem with a soo simple software...

The only Bad Actor you hare showing is Warsaw. If your bank does not require it in order to do business with you, I would remove it, as it is VERY invasive. Sometimes banks tell you it is required, but actually just use these add-ons as a moneymaker.
If you are having a [problem with the conversion of one version of one Application,. the obvious solution is to contact the software maker, and ask for their assistance. I would not count on finding someone with your solution here.
I already barked at OldCant for camping on a too-long thread on an unrelated issue. You too will have far better likelihood of results posting a new discussion with a problem-specific title.
