I set up apple pay during the setup process for my iWatch Series 3 and it is not working on the watch. I am wondering if others are having this difficulty?

I have the same problem....I have tried varying the interval between the two clicks from very rapid, to quite slow, but it often takes two or three tries before Apple Pay registers the double click.
I have the same problem. I cannot consistently countdown been able to press the side button twice to bring up Apple Pay/wallet. When it doesn’t work it’s just easier to reach for my phone which defeats the Purpose of using my watch for Apple Pay. I have added WAllen to my favorites on the Dock, so that I can at least pull it up quicker manually. But it should always work automatically when I press the button twice.
I suggest that you remove your cards from Apple Pay on your Apple Watch Series 3 and add them again by following the instructions here:
See under "Remove a card".
If ‘wrist detection’ is set to ON this would be why. When this setting is activated some other functions are deactivated such as Apple Pay and the ‘stand’ ring (the blue ring) in the Activity rings. Similarly, turning on wrist detection is what disables receiving notifications on both phone and watch simultaneously 👍-1F3FC; no need to reboot, reset, re-enter cards.. Wrist detection is the main cause of unexplained side affects amongst users (in my opinion anyway). Once you understand how this setting alters the watch’s functionality it all makes sense.

I have a similar problem. Specifically, when I double-click the side button, the wallet often does not open, but rather some random app.
Wrist detection is turned on on my Watch. I used Apple Pay 20 minutes ago with no problem, I finished my blue stand ring 2 hours ago. I don’t want both the phone and watch to notify me.

Pay with Apple Watch
To use your default card, double-click the side button and hold the display of your Apple Watch within a few centimeters of the contactless reader. Wait until you feel a gentle tap.
And the screen on the iWatch reads:
"No cards" - Add cards for Apple Pay in the Apple iWatch App for your iphone.
When I check the iPhone it appears to be set up correctly. It works fine with my Series 1 iWatch. It does not work with Series 3 as of right now.
