Hi

Bluetooth alone on either your iPhone or Apple Watch cannot be turned off from your Apple Watch.

Apple Watch can be placed into Airplane Mode using Control Centre:

Put Apple Watch in Airplane Mode

Airplane Mode can also be mirrored, such that enabling it on either of your Apple Watch or iPhone also enables it on the other:

On your iPhone, in the Watch app, go to: My Watch > General > Airplane Mode > turn on Mirror iPhone.

Airplane Mode must then be disabled separately on each device.
