Set up new iPhone without iCloud: iMessage and Photo questions

I am looking to get a new iPhone soon. I have everything backed up to iCloud, but I am thinking I might start fresh with a new phone and not restore it from an iCloud backup. If I do that, I will log in to my iCloud and Apple ID when I set up the device for music and whatnot. Will I be able to access my photos as well? What about iMessages?

Thanks!

iPhone SE, iOS 11.0.2

There is a very big difference between an iCloud backup, and actually using iCloud to store data content.

This explains about iCloud backups.

Only those photos taken on the iPhone's Camera Roll (should you choose to use it) would be on an iCloud backup. But perhaps you are confusing this with iCloud Photo Library, which is not stored on a backup, but is instead a repository for your photos.

Messages are stored in the backup.
