I'm trying to update my iPod from iOS 5.1.1 to the current version. When I try through WiFi through the device, it says that it's go the most recent iOS. When I try through iTunes with the device connected to a computer, it says the same. How can I update to a newer iOS if it keeps telling me that 5.1.1 is the most up-to-date? Did Apple stop supporting older iPods for upgrades to their newer iOS?

3rd generation iPod Touch - it's not supported higher than 5.1.1 - that's what I assumed but figured it didn't hurt to ask.

It appears you have a 3rd generation iPod Touch which can only update to iOS 5. The minimum requirements for iOS 6 is a 4th generation iPod Touch so you have reached the end of your compatibility with 5.1.1
Given that you are seeing that it is the latest, I'm guessing that version of the iPod will not support iOS 11. If you go into Settings>General>About>Model, what do you see there?
