use special characters in email os high sierra

how do I insert special characters (for example the symbol for degree) in an email using apple email os high sierra. Previous answers regarding insertion of special characters say go to edit -> special characters, but "special characters" doesn't appear in the edit options. I used to be able to open character palette, but nothing happens when double clicking anymore.

The name of this item was changed to Emoji & Symbols a long time ago. Can you see that one?

If double click is not working, try drag/drop.

On the US keyboard the degree symbol is option-shift-8 in any case.

Degree symbol on U.S. keyboard: option+shift+8.

Visit System Preferences : Keyboard, and √ Show Keyboard, Emoji, & Symbol Viewers in menu bar. Then, switch from the Keyboard tab to Input Sources tab, and √ Show Input menu in menu bar. The default Input source country flag will appear in the menu bar. Select Show Keyboard Viewer, and experiment with the option, shift, and control key combinations to see diifferent symbol choices for your keyboard.
