I see that the default font for Notes (version 4.5 (863)) was changed in MacOS High Sierra from previous versions.
Is there a way to customise it? I tried a few solutions valid for older OS releases but none of them worked.

The fact is that it's clearly not San Francisco system font, like it was in Notes for Sierra.
You can see the font in the screenshot below: it has this italic-version 'a' char that does not belong to San Francisco, in both left column and note body.
FYI, the note has the default 'Body' style.
Maybe is this happening only to me?

Thanks, but my question is about the default font for the app, not font customizations from the Fonts dialog window.
I saw from Notes preferences you can adjust the default font size, but not the font itself. I was hence looking for a more under-the-hood solution like editing .plist files or such.
I said 'italic' meaning this distinction:

The 1st one (roman) is the "a" I'd expect, the 2nd (italic) is the one I got.

The 'a' to the right is italicized. It's slanted to the right. like this 'a'.
But I understand what you meant now. However, that's the same 'a' as I have with the San Francisco font.
Edit: in Notes that is.
Open notes application type some word say " Hello " in it .Select it and right click on it choose Font > show fonts .
Choose fixed width and can select the desired Font from the Family list .
From the menubar select Format> Fonts> Show Fonts.
Then select the font you want to use plus the size etc.
If Apple is using the default System Font (San Francisco), then you have no control over the default as it is hardwired into the application.
The 'a's in your screenshot do not look italicized.
