If my son bought me an iPhone X in Dubai while on holiday....would it all work/be set up the same exactly the same at home in UK?

You won't be able to get FaceTime on it, and would likely be denied warranty service, especially for issues that require replacing it.

It would be a bad idea for your son to purchase an iPhone X in Dubai for you to use in the UK.
