Try downloading iTunes 12.7.2.60 from iTunes - Download iTunes Now - Apple. It isn't showing up in Software Update yet. I haven't worked out what it is supposed to fix, so it could be this. 😕

Hmm, proxy server? I know that has been causing issues for iTunes for Windows users for some time.

No, we don't have a proxy but have some network magic, but iTunes there was no issues with 12.7.1. It's definitely an iTunes bug. At most it should show an error, but not crash the app anyway.
FWIW I'm OK on Wi-Fi, but I don't have a wired connection or any other magic to contend with.

The only difference between wired and wireless connection (I can remember) is mdns/bonjour broadcast which is present on the wifi and not present on the wire.
But this can only be tested next week...
Solution here: Open Photo app first, then you can resume iTunes 12.7.2, it's workable for me.

It all depends on the network settings, because at another address with wi-fi all works
We finally confirmed that problem is in mDNS/Bonjour. When network is broadcasting mDNS option "_airplay._tcp.local." iTunes is crashing. We disabled it until Apple releases the fix.
May I know how to disable it? What will impact when disabled this option?
Completely disconnect from the internet, then you can launch iTunes.
