Cannot log into applications because the Apple ID that pops up is not correct or the one on the iPhone Settings. How do I correct?

Can you explain what you mean by "cannot log into applications"? If there a specific application that you're having a problem with?
Are you seeing a request for a password for a different Apple ID when trying to update applications? If so, that means there's an app that as purchased under a different Apple ID than the one you're logged into iTunes & App Store with. You'll need to delete that app and repurchase/redownload it under your Apple ID.
Sign out of that Apple ID and sign in with yours.
