With any other iPhone, going into field test mode. Then holding the home button would give you the cell signal numbers instead of bars. how do you do it on the iPhone X with out the home button?

Currently in IOS 11 field test mode with the numbers has been disabled so there is no way anyway to enable this mode currently. If you want to get an equivalent to the cell signal numbers you can: type *3001#12345#* into the keypad and call. From there click LTE and then Serving Cell Meas. Then rspo is your signal to noise ratio. Hopefully they will enable this feature again in later updates of IOS 11
Field Test has never been a documented customer facing feature on any version of the iPhone.
