You can't edit existing stationary layouts in Mail. But you can create your own as this exerpt from Personalize emails with stationery in Mail on Mac - Apple Support explains:
You can also create your own stationery template. In a new message, format text and add images, then choose File > Save as Stationery. Your stationery appears in the Custom category.

Well, Thanks for the replies, I know i can replace images and text but i would like to change the background Images abd Background colors to create my own. I also see that some headings or tittles are encapsulated with a Text Box. How do I edit that as well? There has to be a way that individuals edit custom stationaries or Create more advance Custom ones?

Existing stationary layouts can't be edited.
I found more info in Youtube but apple should have it available for us to experiment
