Is there a Hidden Text option in the Pages App?

There is no hidden text feature in any version of Pages. You can make text white, or the exact color as its background, which will achieve the same goal providing it has not received true highlighting via the Advanced Options menu.

You can make the text 100% transparent or cover it with something.
