There is no support for resizing the tables in the Notes app. Adding the table is itself a good feature, but its paralyzed without this resizing ability. Please update or at least let us know how to do that. Thanks.

Well, yes, but that makes perfect sense to me. You cannot change the font size, and you have pre-specified the number of rows and columns in the table. So naturally Notes takes the task of sizing the length and height of the columns and rows.
Am I missing something?

Yes, you are corretct. But my issue is that- when you start putting text in the cell, they rearrange themselves. You can't increase/decrease length or height of the columns or rows.
I'm not sure what you mean by "resize". You can certainly add rows and/or columns to the table.
Startting with a table like this, click the three dots either above the (right) column or to the left of the (first) row.
Then you will see something like this:
