Every time I invoke Siri in High Sierra, I get a window telling me "assistantd wants to use your confidential information stored in "com.apple.assistant" in your keychain".
Why is it doing this? And how do I make this stop?

Make sure you click "Always Allow" after entering your password, not just "Allow". That should stop it from asking.
I was getting this message as well using High Sierra on my MacBook Pro. I reached out to Apple support to find out what it is and they confirmed that it is a message from the MacOS system. The "assistantd" is for coding purposes. It allows Siri to access your passwords in your keychain so that it won't have to keep asking for it. You have the option to allow it or deny it. I hope that helps.
I started getting this one or two days after I got my Mac each time I use Siri on the Mac. I just click "Deny" all the time. If you don't feel safe clicking allow then click deny. If it gets annoying, call Apple Support
