How to delete MIDI controller assignments?

How do you delete MIDI controller assignments?

I'm trying to set up a keyboard controller and I've messed things up pretty good. There doesn't seem to be a way to delete controller assignments after you've set them. I've tried restoring Logic back to factory settings and restarted everything involved.

Any help would be great. It's driving me crazy
