Hello, I’ve been having so much trouble soft resetting my phone.
I’ve done the press up & down quickly, then side bar button, to wait until Apple logo appears, but all I get is “slide to power off.” This is the most ridiculous way of resetting an iPhone!
Any advice will help. Thank you.

A "soft reset" is not the correct terminology.
It sounds like you want to use this procedure: If your iPhone, iPad, or iPod touch won't turn on or is frozen - Apple Support. The title may be misleading, but I believe this is what you are trying to accomplish:
"On an iPhone X, iPhone 8, or iPhone 8 Plus: Press and quickly release the Volume Up button. Press and quickly release the Volume Down button. Then, press and hold the Side button until you see the Apple logo.
You will have to hold the Side button for at least 10-15 seconds before the Apple logo appears.
